Gyro Assembly

  • 4 pita or flatbreads
  • 1 cup chopped romaine lettuce
  • 1 cup diced tomatoes
  • ½ cup sliced red onions
  • ½ cup sliced cucumbers
  • ¾ cup tzatziki sauce


Instructions

  1. Prepare the Marinade: In a large bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, red wine vinegar, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly to create the marinade.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, tossing well to ensure each piece is evenly coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to enhance the flavor.
  3. Preheat Grill or Skillet: Warm a grill or heavy skillet over medium-high heat, preparing to cook the marinated chicken.
  4. Cook the Chicken: Remove chicken from marinade and place on the grill or skillet. Cook for 5–6 minutes on each side until fully cooked through and lightly charred on the outside.
  5. Rest and Slice: Let the cooked chicken rest for 5 minutes to retain juices, then slice into thin strips suitable for gyro filling.
  6. Warm the Pitas: Gently warm the pita or flatbreads either on the grill or in a pan, making them pliable for wrapping.
