Marinade & Chicken

Gyro Assembly
- 4 pita or flatbreads
- 1 cup chopped romaine lettuce
- 1 cup diced tomatoes
- ½ cup sliced red onions
- ½ cup sliced cucumbers
- ¾ cup tzatziki sauce
Instructions
- Prepare the Marinade: In a large bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, red wine vinegar, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly to create the marinade.
- Marinate the Chicken: Add the chicken thighs to the marinade, tossing well to ensure each piece is evenly coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to enhance the flavor.
- Preheat Grill or Skillet: Warm a grill or heavy skillet over medium-high heat, preparing to cook the marinated chicken.
- Cook the Chicken: Remove chicken from marinade and place on the grill or skillet. Cook for 5–6 minutes on each side until fully cooked through and lightly charred on the outside.
- Rest and Slice: Let the cooked chicken rest for 5 minutes to retain juices, then slice into thin strips suitable for gyro filling.
- Warm the Pitas: Gently warm the pita or flatbreads either on the grill or in a pan, making them pliable for wrapping.
- Assemble the Gyros: Fill each warmed pita with sliced chicken strips, chopped romaine lettuce, diced tomatoes, red onions, cucumbers, and a generous dollop of tzatziki sauce.
