Ingredients
Scale
Noodles
- 8 ounces lo mein noodles (or spaghetti, linguine, or ramen noodles)
Beef and Vegetables
- 1 pound lean ground beef
- 1 tablespoon olive oil
- ½ medium onion, thinly sliced
- 1 medium red bell pepper, thinly sliced
- 5 ounces cremini mushrooms, sliced
- 1 cup snow peas or sugar snap peas
- Salt and pepper, to taste
- Chopped scallions, for garnish (optional)
Sauce
- ¾ cup beef broth (or water)
- ¼ cup hoisin sauce
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon apple cider vinegar or rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon freshly grated ginger
- 2 cloves garlic, minced
Instructions
- Prep Ingredients and Make Sauce: Prepare all the ingredients by slicing the onion, bell pepper, and mushrooms, and gathering the other ingredients. In a bowl, whisk together the beef broth, hoisin sauce, soy sauce, sriracha, vinegar, brown sugar, cornstarch, grated ginger, and minced garlic until the sauce is smooth and well combined.
- Cook Noodles: Boil the lo mein noodles according to the package instructions until al dente. Drain the noodles well and set aside to keep warm.
- Brown Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook it, stirring continuously, until fully browned. Drain off any excess fat, then remove the beef from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the olive oil and sauté the sliced onion until it softens and becomes translucent. Then add the bell pepper, mushrooms, and snow peas or sugar snap peas. Cook the vegetables until they are tender-crisp, maintaining a slight bite.
- Combine and Finish: Return the browned beef to the skillet with the cooked vegetables. Pour in the prepared sauce mixture and bring it to a gentle simmer. Continue cooking until the sauce thickens slightly and coats the ingredients well.
- Toss with Noodles: Remove the skillet from the heat. Add the cooked noodles to the skillet and toss everything together, ensuring the noodles are evenly coated with the flavorful sauce. Season with salt and pepper to taste.
- Serve: Garnish with chopped scallions, if desired, and serve the Ground Beef Lo Mein immediately while hot and fresh.
Notes
- Use plenty of vegetables to add color, nutrition, and crunch to the dish.
- The sauce can be adjusted for spice level by increasing or reducing sriracha.
- Lo mein noodles can be substituted with spaghetti or ramen noodles if unavailable.
- For a lower sodium option, use low-sodium soy sauce and beef broth.
- Ensure not to overcook the vegetables to keep them crisp and vibrant.
- This recipe reheats well and can be stored in an airtight container in the fridge for 2-3 days.
