  • 3 cups cooked long grain rice, refrigerated overnight
  • 3 eggs, beaten

Instructions

  1. Prepare Sauce: Combine the pineapple juice and soy sauce in a small bowl and set aside for later use.
  2. Cook Ham and Pineapple: Heat a large pan over medium-high heat and add 1 tablespoon of coconut oil. Add the diced ham and pineapple chunks and cook for about 3 to 4 minutes until the mixture is golden and starts to caramelize.
  3. Add Bell Pepper: Stir in the diced red bell pepper and cook for another 2 minutes. Transfer this ham mixture to a plate and set aside.
  4. Sauté Aromatics and Toast Rice: Add 1 ½ tablespoons of coconut oil to the pan. Stir in the minced garlic and grated ginger and cook for about 30 seconds until fragrant. Add the chilled rice, mix with the aromatics, and spread it out in the pan. Cook without stirring too much for about 5 minutes until the rice starts to get toasted.
