Description

This Healthy Oatmeal Lemon Poppy Seed Bread is a delightful combination of wholesome ingredients like oats, Greek yogurt, and fresh lemon, perfect for a nutritious breakfast or snack.

Ingredients

Scale

Dry Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds

Wet Ingredients:

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare a 9×5-inch loaf pan with parchment paper or grease.
  2. Mix oats and yogurt: In a medium bowl, combine oats and Greek yogurt; let sit for 10 minutes.
  3. Prepare wet ingredients: In a large bowl, whisk eggs, honey/maple syrup, melted coconut oil, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Combine ingredients: Add oat mixture to wet ingredients; stir until combined. In a separate bowl, mix flour, baking powder, baking soda, salt, and poppy seeds. Gradually add dry ingredients to wet mixture; stir until just combined.
  5. Bake: Pour batter into the loaf pan and bake for 40–45 minutes until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • You can substitute whole wheat flour with all-purpose or gluten-free flour.
  • For extra lemon flavor, add a lemon glaze made with powdered sugar and lemon juice once the bread has cooled.
