- 1 cup plain Greek yogurt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F and prepare a 9×5-inch loaf pan with parchment paper or grease.
- Mix oats and yogurt: In a medium bowl, combine oats and Greek yogurt; let sit for 10 minutes.
- Prepare wet ingredients: In a large bowl, whisk eggs, honey/maple syrup, melted coconut oil, lemon juice, lemon zest, and vanilla extract until smooth.
- Combine ingredients: Add oat mixture to wet ingredients; stir until combined. In a separate bowl, mix flour, baking powder, baking soda, salt, and poppy seeds. Gradually add dry ingredients to wet mixture; stir until just combined.
- Bake: Pour batter into the loaf pan and bake for 40–45 minutes until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- You can substitute whole wheat flour with all-purpose or gluten-free flour.
- For extra lemon flavor, add a lemon glaze made with powdered sugar and lemon juice once the bread has cooled.
