Description

This hearty chili recipe combines savory pork sausage and ground chuck with a blend of tomatoes, beans, and spices for a rich and flavorful dish. Simmered slowly to meld the flavors perfectly, this chili is ideal for a comforting meal that can be customized with a variety of toppings.

Meats

  • 16 ounces pork sausage meat (casings removed)
  • 2 pounds ground chuck

Vegetables & Beans

  • ½ cup yellow onion (chopped)
  • 1 clove garlic (minced)
  • 15 ounces black beans (drained and rinsed, 1 can)
  • 15 ounces red beans (drained and rinsed, 1 can; pintos also work)

Tomatoes & Sauces

  • 8 ounces tomato sauce (1 can)
  • 14.5 ounces diced tomatoes (1 can)
  • 1 cup water
  • ¼ cup ketchup
  • 1 tablespoon yellow mustard

Seasonings & Condiments

  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 ounce chili seasoning (store-bought or homemade)
  • ½ teaspoon kosher salt (or to taste)
  • ½ teaspoon ground black pepper

Toppings (Optional)

  • chopped onions
  • hot sauce
  • sliced jalapeños
  • shredded cheese
  • crackers
  • sour cream
  • fresh cilantro


Instructions

  1. Brown the Sausage with Onion and Garlic: Heat a large skillet over medium-high heat. Add the pork sausage meat and crumble it while cooking. When it is nearly browned, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 2-3 minutes. Drain excess oil if necessary, then set aside the mixture.
  2. Cook Ground Chuck by Boiling: Place the ground chuck in a Dutch oven and crumble it with a wooden utensil. Add enough water to cover the meat completely. Bring the water to a boil and boil the meat until it is browned. Drain the meat in a colander and return it to the Dutch oven.
  3. Combine Sausage Mixture and Ground Chuck: Add the previously cooked sausage, onion, and garlic mixture to the browned ground chuck. Stir well to combine both meats evenly.
  4. Add Tomato, Beans, and Seasonings: Stir in the tomato sauce, diced tomatoes, 1 cup of water, black beans, red beans, apple cider vinegar, Worcestershire sauce, chili seasoning, ketchup, mustard, kosher salt, and ground black pepper. Mix thoroughly to blend all ingredients together.
  5. Simmer the Chili: Bring the mixture to a simmer over medium-low heat. Cook uncovered, stirring often, for at least 1 hour or until the chili thickens and the flavors meld. Add a little more water if the chili gets too thick during cooking.
  6. Serve with Toppings: Spoon the chili into bowls and serve with your favorite toppings such as fresh cilantro, chopped onions, shredded cheese, crackers, hot sauce, sliced jalapeños, sour cream, or any toppings of choice.

Notes

  • Simmering the chili slowly allows the flavors to develop fully and meld nicely together.
  • You can substitute the red beans with pinto beans if preferred or for a different texture.
  • Adjust seasoning such as salt, pepper, and chili seasoning to taste before and after cooking.
  • For a thicker chili, simmer longer; for thinner, add additional water as needed.
