  • 1 tablespoon olive oil
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can kidney beans (drained and rinsed)
  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 cup beef broth or water


Instructions

  1. Heat the Olive Oil: Heat olive oil in a large pot over medium heat.
  2. Cook Vegetables: Add diced onion and bell pepper, cook until softened. Stir in garlic.
  3. Cook Ground Beef: Add ground beef, cook until browned. Drain excess grease if needed.
  4. Add Spices: Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne if using. Cook to toast the spices.
  5. Combine Ingredients: Add tomatoes, tomato sauce, beans, and broth. Bring to a simmer.
  6. Simmer: Reduce heat, cover, and simmer for 30–45 minutes, stirring occasionally.
  7. Adjust Seasoning: Taste and adjust seasoning. Serve hot with toppings.

Notes

Notes:

  • For a thicker chili, simmer uncovered for the last 10–15 minutes.
  • You can substitute ground turkey or chicken for beef.
  • Add corn or chopped jalapeños for variation.
