Ingredients
Scale
Carrots and Seasoning
- 1 pound baby carrots, washed and peeled
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt, to taste
- Black pepper, to taste
Honey Garlic Mixture
- 3 tablespoons honey
- 2 tablespoons olive oil
Garnish
- Fresh parsley, chopped (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s at the ideal temperature for roasting the carrots evenly and achieving caramelization.
- Mix Honey Garlic Sauce: In a large mixing bowl, whisk together the honey, olive oil, minced garlic, thyme, salt, and pepper until thoroughly combined to create a flavorful glaze for the carrots.
- Coat Carrots: Add the baby carrots to the bowl and toss them thoroughly in the honey garlic mixture ensuring each carrot is evenly coated with the sauce.
- Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it to prevent sticking and make cleanup easier.
- Arrange Carrots: Spread the coated carrots out in a single layer on the prepared baking sheet with some space between each carrot to allow for even roasting and caramelization.
- Roast Carrots: Place the baking sheet in the preheated oven and roast for 20-25 minutes until the carrots are tender and starting to caramelize, tossing them halfway through cooking for even color and texture.
- Cool: Remove the roasted carrots from the oven and let them cool for a few minutes to allow the flavors to settle.
- Serve: Transfer the carrots to a serving dish and optionally garnish with fresh chopped parsley. Serve warm as a delicious side dish.
Notes
- You can use dried thyme if fresh is not available; just use half the quantity.
- Make sure to toss the carrots halfway through roasting to cook them evenly and prevent burning.
- If you prefer a spicier kick, add a pinch of red pepper flakes to the honey garlic glaze.
- Adjust salt and pepper according to your taste preference.
- For an extra layer of flavor, you can drizzle a little balsamic vinegar over the carrots before roasting.
