Ingredients
Scale
Sweet Potatoes
- 4 medium sweet potatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Honey Garlic Sausage Mixture
- 1 pound honey garlic sausage, sliced
- 2 tablespoons butter
- 3 cloves garlic, minced
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the sweet potatoes.
- Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Prick each sweet potato several times with a fork to allow steam to escape during baking.
- Oil Sweet Potatoes: Rub each sweet potato lightly with olive oil and place them on a parchment-lined baking sheet.
- Bake Sweet Potatoes: Bake for 45 to 50 minutes until tender when pierced with a fork. Remove from oven and let them cool slightly.
- Cook Sausage: While sweet potatoes bake, heat butter in a large skillet over medium heat. Add sliced honey garlic sausage, cooking until browned and cooked through (6-8 minutes). Remove sausage and set aside.
- Sauté Garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Prepare Sauce: Stir in honey, soy sauce, and thyme leaves. Simmer for a couple of minutes until the sauce thickens slightly.
- Combine Sausage with Sauce: Return sausage to skillet and toss to coat in the honey garlic sauce. Season with salt and pepper to taste.
- Prepare Sweet Potatoes to Serve: Cut a lengthwise slit into each sweet potato and fluff the insides with a fork.
- Assemble the Dish: Spoon the honey garlic sausage mixture over the fluffed sweet potatoes.
- Garnish and Serve: Sprinkle with fresh chopped parsley if desired, then serve warm.
Notes
- You can substitute honey garlic sausage with any preferred sausage variety for a different flavor profile.
- For a spicier kick, add a pinch of red pepper flakes to the sauce while simmering.
- Make sure to prick the sweet potatoes well to avoid bursting during baking.
- Leftover sweet potatoes and sausage can be stored separately in the refrigerator for up to 3 days.
