Potatoes:
- 1 ½ pounds baby Yukon Gold potatoes
Seasoning:
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon honey
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cook Potatoes: Boil the potatoes until fork-tender, then cool slightly. Smash each potato gently with the bottom of a glass or measuring cup.
- Prepare Mustard Mixture: Whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic powder, onion powder, salt, and pepper.
- Coat Potatoes: Brush the mustard mixture over each smashed potato.
- Roast: Roast in the oven for 25–30 minutes until crispy and golden.
- Serve: Sprinkle with parsley before serving.
Notes
- For extra crispiness, broil the potatoes for the last 2–3 minutes of baking.
- You can also add grated Parmesan before roasting for added flavor.
