Description

These Honey Mustard Smashed Potatoes are a delicious twist on classic roasted potatoes. The combination of tangy mustard, sweet honey, and savory spices creates a flavorful side dish that pairs perfectly with any meal.

Potatoes:

  • 1 ½ pounds baby Yukon Gold potatoes

Seasoning:

  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cook Potatoes: Boil the potatoes until fork-tender, then cool slightly. Smash each potato gently with the bottom of a glass or measuring cup.
  3. Prepare Mustard Mixture: Whisk together olive oil, Dijon mustard, whole grain mustard, honey, garlic powder, onion powder, salt, and pepper.
  4. Coat Potatoes: Brush the mustard mixture over each smashed potato.
  5. Roast: Roast in the oven for 25–30 minutes until crispy and golden.
  6. Serve: Sprinkle with parsley before serving.

Notes

  • For extra crispiness, broil the potatoes for the last 2–3 minutes of baking.
