Ingredients
Scale
Chicken
- 4 chicken breasts (4 ounces each), cut into strips
Marinade & Sauce
- 1 cup Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- ¼ cup honey
- Salt and pepper to taste
Other
- Skewers for grilling (soak wooden skewers in water for at least 30 minutes before use)
Instructions
- Prepare the Marinade: In a small bowl, combine the Greek yogurt, Dijon mustard, yellow mustard, and honey. Mix well until smooth and uniform. Season with salt and pepper to your liking. Reserve half of the mixture for use as a dipping sauce later.
- Marinate the Chicken: Place the chicken strips into a resealable plastic bag or a shallow dish. Pour ½ cup of the prepared marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate to marinate for at least 4 hours, preferably up to 24 hours, allowing the flavors to fully penetrate the meat.
- Preheat the Grill: About 10-15 minutes before cooking, preheat your grill to 400°F (204°C). If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
- Thread Chicken onto Skewers: Remove the chicken from the marinade, letting excess drip off. Thread the chicken strips carefully onto the skewers to ensure even cooking.
- Grill the Skewers: Place the chicken skewers on the preheated grill. Cook each side for approximately 5 minutes until the chicken is cooked through, has clear grill marks, and reaches an internal temperature of 165°F (74°C).
- Rest and Serve: Once cooked, remove the skewers from the grill and let them rest for 3 minutes to allow juices to redistribute. Serve hot with the reserved Honey Mustard Yogurt dipping sauce on the side for added flavor.
Notes
- Soaking wooden skewers in water for at least 30 minutes before grilling prevents them from burning.
- Marinating the chicken overnight enhances tenderness and flavor but at least 4 hours is recommended for best results.
- Ensure the chicken reaches a safe internal temperature of 165°F (74°C) before serving.
- If you don’t have a grill, these skewers can be cooked under a broiler or on a grill pan over medium-high heat.
- Leftover dipping sauce can be stored in the refrigerator and used within 2 days.
