Description

These Honey Sriracha Chicken Skewers combine sweet honey with spicy sriracha and savory soy sauce for a flavor-packed bite. Tender chicken thigh pieces are marinated, skewered, and grilled or pan-cooked to juicy perfection, then basted with a sticky, flavorful glaze. Chicken and Marinade

  • 1.5 lb (750g) chicken thigh fillets, cut into 2cm (4/5″) cubes
  • 1/3 cup honey
  • 2 tbsp Dijon mustard
  • 4 tbsp soy sauce
  • 2 garlic cloves, crushed
  • 2 – 3 tbsp sriracha or any other hot sauce (e.g., Frank’s), adjust to taste
  • 1/4 tsp salt
  • 1 1/2 tbsp vegetable oil
  • 14 small skewers, about 18cm (7″) long


Instructions

  1. Prepare the chicken: Cut the chicken thigh fillets into 2cm (4/5″) cubes to ensure even cooking and easy skewering.
  2. Make the marinade: In a bowl, mix together honey, Dijon mustard, soy sauce, crushed garlic, sriracha, salt, and vegetable oil until smooth.
  3. Reserve marinade for basting: Transfer 4 tablespoons of the marinade into a small separate bowl to use later for basting the skewers during cooking.
  4. Marinate chicken: Add the chicken pieces to the remaining marinade, mix well to coat, and let it marinate for at least 20 minutes or up to overnight in the refrigerator for deeper flavor.
  5. Thread chicken onto skewers: Discard marinade left in the bowl. Thread about 4 pieces of marinated chicken onto each of the 14 small skewers.
  6. Cook skewers: Preheat a BBQ grill or skillet over medium heat with oil. Place the skewers on and cook the first side for 2 1/2 minutes, then turn the skewers to the other side.
  7. Baste and continue cooking: Generously baste the cooked side now facing up with the reserved marinade. After another 2 1/2 minutes, turn the skewers again and quickly baste the other side. Turn immediately and cook for just a few seconds more before removing from heat.
  8. Final basting and serve: Place the cooked skewers on a plate and baste one more time with the reserved marinade to maximize flavor and moisture, then serve immediately.
  9. Serving suggestion: These skewers are excellent served alongside cilantro/coriander lime rice or your favorite side dish.
