Description
This Instant Pot Bone In Chicken Thighs with Peri Peri Sauce recipe offers a flavorful and tender chicken dish infused with a zesty, spicy peri peri sauce. Using the Instant Pot allows for quick pressure cooking that locks in moisture and flavors. The sauce is later reduced to a rich consistency, making it perfect for drizzling over the juicy chicken thighs. Ideal for a weeknight dinner, this recipe combines citrus, spices, and garlic for a vibrant taste with minimal effort.
Ingredients
Scale
Chicken
- 1 pound chicken thighs, boneless and skinless
- 1 teaspoon all-purpose seasoning
Peri Peri Sauce
- 1/2 cup chicken broth
- 1 lemon, zested and juiced
- 1 orange, juiced
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the Chicken: Pat the chicken thighs dry with paper towels and season both sides evenly with the all-purpose seasoning to ensure maximum flavor.
- Arrange Chicken in Instant Pot: Place the seasoned chicken thighs into the bottom of the Instant Pot, arranging them in a single layer if possible to allow for even cooking.
- Mix and Add Sauce Ingredients: In a mixing bowl, whisk together the chicken broth, lemon juice and zest, orange juice, olive oil, minced garlic, paprika, dried oregano, and crushed red pepper flakes until well combined. Pour this mixture evenly over the chicken thighs in the Instant Pot.
- Pressure Cook: Secure the Instant Pot lid and set the valve to sealing. Cook on the manual/high pressure setting for 13 minutes to infuse the chicken with the peri peri flavors.
- Release Pressure: Allow the pressure to naturally release for 5 minutes, then carefully perform a quick release for any remaining pressure before opening the lid.
- Reduce the Sauce: Remove the cooked chicken and set it aside. Set the Instant Pot to the ‘sauté’ function and simmer the sauce for about 5 minutes to concentrate and thicken its flavors.
- Serve: Place the chicken on a serving platter, drizzle the reduced peri peri sauce over the top, and garnish with chopped fresh parsley. Serve hot for best taste.
Notes
- Ensure chicken thighs are patted dry before seasoning for better flavor absorption.
- Adjust crushed red pepper flakes to taste depending on desired spice level.
- If you prefer, bone-in chicken thighs can be used but may require slightly longer cooking time.
- Leftover sauce can be refrigerated and used as a marinade or dipping sauce.
- Serve with steamed rice or crusty bread to complement the rich sauce.
