Description

These Irresistibly Easy Sloppy Joe Sweet Potato Bowls combine the savory, tangy flavors of classic sloppy joe sauce with nutrient-rich roasted sweet potatoes for a comforting and wholesome meal. Perfect for a hearty weeknight dinner, this dish features roasted sweet potatoes seasoned with parmesan and herbs, topped with a rich homemade sloppy joe beef mixture and customizable toppings like pickles, jalapeños, and fresh chives for added zest and texture.

Ingredients

Scale

Sweet Potatoes

  • 2½ pounds sweet potatoes, diced approx. 1-inch
  • 3 tbsp avocado oil
  • 1 tbsp all-purpose seasoning salt
  • 1 tsp dried parsley
  • ½ tsp freshly ground black pepper
  • ¼ cup parmesan cheese, freshly grated

Sloppy Joe Sauce and Beef

  • 1½ pounds lean ground beef
  • 2 tsp oil
  • 1¼ cups ketchup
  • ¼ cup water
  • 2 tbsp sugar
  • 1 tbsp prepared mustard
  • ½ tsp white vinegar
  • ½ tsp paprika
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper

Optional Toppings

  • Optional sliced dill pickles
  • Optional pickled red onions
  • Optional sliced raw jalapeños
  • Optional snipped chives or sliced green onions

Instructions

  1. Preheat and roast sweet potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with avocado oil, all-purpose seasoning salt, dried parsley, freshly ground black pepper, and freshly grated parmesan cheese. Spread the coated sweet potatoes evenly on a baking sheet and roast for 20 to 25 minutes until tender and slightly caramelized.
  2. Prepare the sloppy joe beef mixture: While the sweet potatoes roast, heat 2 teaspoons of oil in a large pan over medium heat. Add the lean ground beef and cook until no longer pink, breaking it up as it cooks. Drain any excess fat from the pan. Stir in ketchup, water, sugar, prepared mustard, white vinegar, paprika, kosher salt, and freshly ground black pepper. Continue cooking and stirring until the sauce thickens and coats the beef evenly.
  3. Prepare toppings: While the beef simmers, slice the dill pickles, jalapeños, and chop the chives or green onions as desired. Prepare any other optional toppings like pickled red onions to your liking.
  4. Assemble bowls: Divide the roasted sweet potatoes evenly among four bowls. Top each bowl generously with the sloppy joe beef mixture. Add your choice of optional toppings such as sliced dill pickles, pickled red onions, sliced jalapeños, and chopped chives or green onions for added flavor and texture. Serve warm.

Notes

  • You can substitute lean ground turkey or chicken for the beef for a lighter version.
  • Adjust the seasoning salt and sugar according to your taste preference.
  • For a spicier dish, add more jalapeños or a dash of hot sauce to the beef mixture.
  • If parmesan is not available, a sprinkle of nutritional yeast can provide a cheesy flavor.
  • This recipe can be made ahead; reheat the beef mixture and roasted sweet potatoes before serving.
