Sweet Potatoes

- 1 tbsp all-purpose seasoning salt

Sloppy Joe Sauce and Beef
- 1½ pounds lean ground beef
- 2 tsp oil
- 1¼ cups ketchup
- ¼ cup water
- 2 tbsp sugar
- 1 tbsp prepared mustard
- ½ tsp white vinegar
- ½ tsp paprika
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper

- Optional snipped chives or sliced green onions
Instructions
- Preheat and roast sweet potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with avocado oil, all-purpose seasoning salt, dried parsley, freshly ground black pepper, and freshly grated parmesan cheese. Spread the coated sweet potatoes evenly on a baking sheet and roast for 20 to 25 minutes until tender and slightly caramelized.
- Prepare the sloppy joe beef mixture: While the sweet potatoes roast, heat 2 teaspoons of oil in a large pan over medium heat. Add the lean ground beef and cook until no longer pink, breaking it up as it cooks. Drain any excess fat from the pan. Stir in ketchup, water, sugar, prepared mustard, white vinegar, paprika, kosher salt, and freshly ground black pepper. Continue cooking and stirring until the sauce thickens and coats the beef evenly.
