Description

This Irresistibly Herbed Mushroom Bread Stuffing is a cozy, comforting side dish perfect for holiday meals or family dinners. Made with crusty French bread cubes, sautéed mushrooms, aromatic fresh herbs, and seasoned vegetable broth, it offers a flavorful, moist stuffing that’s both hearty and satisfying. The combination of thyme, rosemary, and parsley brings a lovely herby fragrance and depth, while the garlic, onion, and celery create a classic savory base. Ideal for vegetarians and those looking for a delicious, home-cooked stuffing option.

Ingredients

Scale

Bread

  • 1 loaf French bread (cubed)

Vegetables & Herbs

  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 8 oz mushrooms (chopped)
  • 3 cloves garlic (minced)
  • 2 tsp fresh thyme (chopped)
  • 1 tsp fresh rosemary (chopped)
  • 1/4 cup parsley (chopped)

Liquids & Seasonings

  • 1/2 cup unsalted butter (melted)
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Prepare Bread Cubes. Cube the loaf of French bread into bite-sized pieces and set aside. This will form the base texture for your stuffing.
  2. Sauté Vegetables and Mushrooms. In a large skillet, melt the unsalted butter over medium heat. Add the diced onion, celery, and chopped mushrooms, cooking until they are tender and fragrant, about 7-8 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  3. Add Garlic and Herbs. Stir in the minced garlic, fresh thyme, and fresh rosemary, cooking for another 1-2 minutes until aromatic. Be careful not to burn the garlic.
  4. Combine Bread and Vegetable Mixture. Transfer the sautéed vegetable and herb mixture to a large mixing bowl. Add the cubed French bread and toss thoroughly to combine.
  5. Add Broth and Seasonings. Pour in the vegetable broth, sprinkle the salt and pepper evenly over the mixture, then gently stir to moisten all the bread cubes without making the stuffing soggy.
  6. Let the Mixture Rest. Allow the stuffing mixture to sit for about 10 minutes to absorb the broth fully and develop flavors.
  7. Transfer and Bake. Preheat your oven to 350°F (175°C). Place the stuffing mixture into a buttered casserole dish, spreading it evenly. Cover loosely with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes to achieve a slightly crisp top.
  8. Garnish and Serve. Once baked, remove from the oven and sprinkle chopped parsley over the top to add fresh color and flavor. Serve warm as a delicious side dish to your meal.

Notes

  • For a gluten-free version, substitute the French bread with gluten-free bread cubes.
  • If you prefer a richer flavor, you can use chicken broth instead of vegetable broth (not vegetarian).
  • Make sure bread cubes are slightly stale or dry to absorb the broth well and avoid sogginess.
  • You can prepare the stuffing mixture the day before and refrigerate, then bake just before serving.
  • Optional: Add chopped nuts like pecans or walnuts for added texture.
