Italian Sausage:

  • 1 pound Italian sausage (mild or spicy, casings removed)

Other Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 4 cups russet or Yukon gold potatoes (peeled and diced)
  • 2 large carrots (sliced)
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 3 cups baby spinach (roughly chopped)
  • ½ cup heavy cream


Instructions

  1. Brown the Sausage: In a large soup pot, cook Italian sausage until browned. Add onion and garlic.
  2. Add Vegetables: Stir in potatoes and carrots, then pour in chicken broth. Season with oregano, thyme, red pepper flakes, salt, and pepper. Simmer until vegetables are tender.
  3. Finish the Soup: Add spinach, cook until wilted. Stir in heavy cream, simmer briefly, adjust seasonings, and serve hot.

Notes

  • For a lighter version, use half-and-half or omit cream.
  • Kale can be used instead of spinach.
