- 1 1/2 pounds Yukon gold potatoes (peeled and diced)
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1/2 cup cooked lobster meat (chopped)
- 1 tablespoon chives (chopped)
Asparagus:
- 1 bunch asparagus (trimmed)
- 1 tablespoon olive oil (for asparagus)
- Salt and pepper to taste
Instructions
- Marinate Lamb Chops: Season chops with olive oil, rosemary, garlic, salt, and pepper. Marinate for 15–20 minutes.
- Prepare Lobster Mash: Boil potatoes until fork-tender, then mash with butter and cream. Fold in lobster meat and chives.
- Roast Asparagus: Toss asparagus with olive oil, salt, and pepper. Roast at 400°F for 10–12 minutes.
- Cook Lamb Chops: Sear in a hot skillet for 3–4 minutes per side for desired doneness. Let rest for 5 minutes.
- Plate: Spoon lobster mash on plates, top with lamb chops, and serve with roasted asparagus.
