Egg Mixture
- 24 large eggs
- 1 cup milk (cream, or half and half)
- 2 & 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon mustard powder
- 1 teaspoon seasoning salt
- 1/4 teaspoon cayenne pepper

- 1 (8-oz) package cream cheese, cut into chunks

Instructions
- Prepare the Egg Mixture: In a blender, combine the eggs, milk, and all the spices including kosher salt, black pepper, garlic powder, onion powder, mustard powder, seasoning salt, and cayenne pepper. Blend until smooth. If your blender is too small, you can whisk the ingredients together in a large bowl instead.
- Heat the Butter: Melt 1/2 cup of butter in a 12-inch high-sided skillet over medium heat until hot but not browned.
- Cook the Eggs Slowly: Pour the egg mixture into the hot butter, then reduce the heat to medium-low. Cook the eggs very slowly, using a spatula to occasionally scrape and fold the bottom of the pan. Continue cooking for about 10 to 15 minutes until eggs begin to set but are still creamy.
- Add Cream Cheese: Fold in chunks of cream cheese carefully, allowing it to melt slowly into the eggs creating a rich, creamy texture.
- Transfer to Crock Pot: When eggs are mostly cooked but still slightly wet, transfer them to a crock pot and set it to the warm setting (or low if warm is unavailable). Cover with a lid.
- Keep Warm and Stir Occasionally: Stir the eggs every hour to maintain a uniform creamy texture. Keep them warm for up to 4-5 hours but avoid leaving them longer to prevent rubberiness.
- Serve and Garnish: Before serving, sprinkle with green onions or chives and shredded cheddar cheese if desired for added flavor and presentation.
