Mashed Potato Cheese Puffs:
- 2 cups cold mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 2 large eggs
- 1/4 cup grated Parmesan cheese

- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and lightly coat a 12-cup muffin tin with nonstick cooking spray.
- Mix ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, chives, garlic powder, salt, and pepper. Mix until smooth and well combined.
- Fill muffin tin: Spoon the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake: Bake for 20 to 25 minutes, or until the tops are golden brown and the puffs are set.
