Description

These McGriddle Bites are a delicious breakfast treat combining fluffy pancake batter, savory breakfast sausage, sharp cheddar cheese, and a hint of sweet maple syrup. Perfectly baked in mini muffin tins, they offer a convenient, bite-sized version of a classic breakfast favorite that’s crispy on the outside and soft inside.

Pancake Mixture

  • 2 cups complete pancake mix
  • 1 1/2 cups water
  • 1 cup shredded cheddar cheese
  • 1/4 cup maple syrup

Sausage

  • 1 pound breakfast sausage


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it is hot and ready for baking the bites evenly.
  2. Cook Sausage: In a medium frying pan over medium-high heat, brown and crumble the breakfast sausage until fully cooked through, about 6-8 minutes.
  3. Drain Sausage: Once cooked, drain excess fat from the sausage and set it aside to cool slightly.
  4. Mix Batter: In a large mixing bowl, whisk together the pancake mix, water, shredded cheddar cheese, and maple syrup until you have a smooth, well combined batter.
  5. Combine Sausage and Batter: Stir the cooked sausage into the pancake batter ensuring even distribution of meat throughout.
  6. Fill Muffin Tins: Spoon the batter mixture evenly into mini muffin tins. Use silicone tins or spray or paper line metal tins to prevent sticking.
  7. Bake: Bake at 400 degrees Fahrenheit for 12-15 minutes or until the bites are golden brown and a toothpick inserted comes out clean.

Notes

  • Using silicone muffin tins makes removal easier, but if using metal tins, grease the pans well or use paper liners.
  • Drain excess fat well from the sausage to avoid greasy bites.
