Description

These Mini S’mores Pies combine the classic campfire flavors of gooey marshmallows, melted chocolate, and rich brownie in individual graham cracker crusts. Perfectly portioned for sharing or indulging on your own, they’re an easy-to-make treat that brings nostalgic s’mores vibes baked into adorable mini pies.

Ingredients

Scale

Brownie Base

  • 1 package brownie mix

Pie Crust

  • 8 mini graham cracker crusts

Topping

  • 1 cup mini marshmallows
  • 3/4 cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven according to the temperature indicated on the brownie mix package, usually around 350°F (175°C), to ensure it’s ready to bake the pies evenly.
  2. Prepare Brownie Batter: In a mixing bowl, follow the instructions on the brownie mix package to prepare the batter. This typically involves combining the mix with eggs, oil, and water and mixing until smooth.
  3. Fill Crusts: Spoon the brownie batter into each mini graham cracker crust, filling them but leaving some space at the top to allow the brownies to rise as they bake.
  4. Bake Brownies: Place the filled crusts on a baking sheet and bake them according to the package instructions, generally about 15-20 minutes, or until a toothpick inserted into the brownie layer comes out clean.
  5. Add Toppings: Immediately after removing the pies from the oven, top each one with mini marshmallows and chocolate chips to create the classic s’mores topping.
  6. Melt Toppings: Return the pies to the oven for an additional 1 to 2 minutes, just until the marshmallows soften and begin to melt slightly, but do not fully brown or burn.
  7. Cool and Serve: Remove the mini s’mores pies from the oven and allow them to cool completely before serving to let the layers set and avoid burning your mouth on hot marshmallows.

Notes

  • Use a toothpick to check doneness of the brownies without disturbing the crust.
  • If mini graham cracker crusts are unavailable, consider using a small tart shell or a hollowed-out muffin cup lined with graham cracker crumbs.
  • These pies are best served the same day but can be refrigerated and gently reheated.
  • Toasting marshmallows longer will give a more traditional browned look but watch carefully to avoid burning.
  • Adjust baking time slightly depending on your oven and the exact size of the mini crusts.
