- Make the Mochi Dough: In a microwave-safe bowl, whisk together glutinous rice flour, granulated sugar, water, and salt until the mixture is smooth. Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove and stir thoroughly, then microwave again for another 1 minute until the dough becomes thick and sticky.
- Shape the Mochi Balls with Cheese: Divide the mochi dough into 12 equal portions. Take one portion and flatten it in your palm. Place a spoonful of shredded mozzarella cheese in the center, then carefully fold the edges over the cheese to seal it completely. Roll the dough between your hands to form a smooth ball, making sure there are no cracks or openings where cheese could leak out.
- Cook the Mochi Cheese Balls: Preheat a non-stick skillet over medium heat and lightly grease it with oil. Place the mochi balls seam side down in the skillet. Cook for 3 to 4 minutes on each side until they turn golden brown and develop a crispy exterior.
