- 8 oz mushrooms, finely chopped
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

- 1/4 teaspoon black pepper
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon chopped fresh parsley
Puff Pastry
- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
- Sauté Vegetables: Heat olive oil in a medium skillet over medium heat. Add finely chopped onion and sauté until translucent, about 3 minutes, then add minced garlic and cook for an additional 30 seconds to release its flavor.
- Cook Mushrooms: Stir in chopped mushrooms, thyme, salt, and black pepper. Cook the mixture until the mushrooms release their moisture and it becomes dry, approximately 8–10 minutes. Remove from heat and let it cool slightly.
- Mix Filling: Incorporate the softened cream cheese, shredded mozzarella, and chopped parsley into the mushroom mixture thoroughly until well combined.
- Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into 16 equal squares.
- Assemble Bites: Spoon a small amount of mushroom cheese filling into the center of each puff pastry square. Either fold the corners up and pinch to seal to create a pouch or leave them open-faced like mini tarts.
- Apply Egg Wash: Place the assembled puff bites on the prepared baking sheet and brush the tops generously with the beaten egg to encourage golden browning.
- Bake: Bake in the preheated oven for 15–18 minutes or until the puff pastry is golden brown and puffed up.
- Cool and Serve: Allow the puff bites to cool slightly on the baking sheet before serving warm.
