Description

These No-Bake Brownie Bites are an easy, healthy snack combining medjool dates, almond flour, and cocoa powder for a rich chocolate flavor without any baking. Perfect for a quick treat, they pack natural sweetness, protein, and fiber in bite-sized portions that are vegan, gluten-free, and perfect for on-the-go energy.

Ingredients

Scale

Base Ingredients

  • 1 cup medjool dates, pitted
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Add-ins and Toppings

  • 1/4 cup mini chocolate chips
  • Optional toppings: cocoa powder, shredded coconut, or crushed nuts for rolling

Instructions

  1. Process Dates: Add the pitted medjool dates to a food processor and pulse until they break down into small bits, forming a sticky base.
  2. Add Dry and Wet Ingredients: Add almond flour, unsweetened cocoa powder, almond butter, vanilla extract, and a pinch of salt to the processor. Process until the mixture becomes thick, sticky, and can hold together when pressed.
  3. Mix in Chocolate Chips: Transfer the mixture to a bowl and gently fold in the mini chocolate chips to distribute them evenly.
  4. Form Bites: Scoop out tablespoon-sized portions of the mixture and roll each into a ball with your hands.
  5. Coat Bites (Optional): Roll the bites in your choice of cocoa powder, shredded coconut, or crushed nuts to add texture and visual appeal.
  6. Chill: Place the brownie bites on a parchment-lined tray and chill in the refrigerator for 20–30 minutes to firm up before serving.

Notes

  • Store the brownie bites in an airtight container in the refrigerator for up to 1 week or freeze them for longer storage.
  • For a nut-free alternative, substitute almond butter with sunflower seed butter and almond flour with oat flour.
  • These bites can be customized by adding other mix-ins like chopped nuts or dried fruit if desired.
