- 8 ounces Spanish chorizo sausage
Vegetables
- 1/2 onion, chopped
- 3 bell peppers (two red, one yellow), chopped
- 3 cloves garlic, minced

Tomato & Broth
- 1 (19 fluid ounce) can diced tomatoes with Italian seasoning (including juices)
- 1 (7.2 fluid ounce) can tomato sauce
- 2 (10 fluid ounce) cans chicken broth
Dry Goods
- 1 (12 ounce) package large egg noodles
Seasonings & Garnishes
- Salt and pepper, to taste
- Parmesan cheese, grated (optional)
Instructions
- Cook the Chorizo and Onion: Chop the onions and cut the chorizo into desired size pieces. Add both to a pot or Dutch oven over medium-high heat. Cook for about five minutes, stirring occasionally until the chorizo is browned and the onions are softened.
- Add the Bell Peppers: Meanwhile, chop the bell peppers. Add them to the pot and cook for a few more minutes, stirring often, until the peppers start to soften.
- Add Liquids, Garlic, Basil, and Noodles: Pour in the diced tomatoes with their juices, tomato sauce, and chicken broth. Add minced garlic, chopped basil, and the egg noodles. Increase the heat to high and bring everything to a boil.
- Simmer Until Noodles are Cooked: Reduce the heat to medium-high or high-low if it bubbles too much. Simmer uncovered for about 10 minutes, stirring frequently to prevent sticking. Cook until the noodles are tender and the sauce thickens and reduces.
- Serve: Once the noodles are soft and sauce is thickened, season with salt and pepper to taste. Serve immediately, garnished with extra chopped basil and freshly grated Parmesan cheese if desired.
