Description

Outback Steakhouse Alice Springs Chicken is a flavorful dish featuring marinated chicken breasts topped with sautéed mushrooms and melted Colby Jack cheese. This recipe combines a sweet and tangy Dijon mustard and honey marinade with savory sautéed mushrooms for a deliciously indulgent meal, perfect for baking in the oven to juicy perfection.

Ingredients

Scale

Marinade

  • ½ cup Dijon mustard
  • ½ cup honey
  • ¼ cup mayonnaise
  • 1 teaspoon fresh lemon juice

Main Ingredients

  • 4 boneless, skinless chicken breasts (about 1 ½ pounds)
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 cups shredded Colby Jack cheese
  • 2 tablespoons fresh parsley, for garnish (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Marinade: In a small bowl, combine Dijon mustard, honey, mayonnaise, and lemon juice thoroughly. Reserve ¼ cup of this marinade in a covered container and refrigerate for serving alongside the finished dish.
  2. Marinate the Chicken: Place the chicken breasts in a large plastic zipper-top bag. Pour the remaining marinade over the chicken, making sure each piece is evenly coated. Seal the bag and refrigerate for at least 30 minutes, or up to overnight for enhanced flavor.
  3. Cook the Mushrooms: Preheat your oven to 400°F (200°C). In a large oven-proof skillet, melt the butter over medium-high heat until the foam subsides. Add the sliced mushrooms and sauté for 5 to 7 minutes until they release moisture and begin to brown. Remove the mushrooms from the skillet and set aside.
  4. Sear the Chicken: Using the same skillet, heat the olive oil over medium-high heat. Lay the marinated chicken breasts in the skillet and cook them for about 5 minutes on each side, or until they develop a golden-brown crust.
  5. Add Toppings and Bake: Top each chicken breast with the sautéed mushrooms and a generous amount of shredded Colby Jack cheese. Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Garnish and Serve: Remove the skillet from the oven. Garnish the chicken with fresh parsley if desired, and season with salt and freshly ground black pepper to taste. Serve each portion with the reserved marinade on the side for dipping.

Notes

  • Marinate the chicken overnight to deepen the flavors even more.
  • Use an oven-proof skillet to seamlessly cook from stovetop to oven without transferring.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
  • Colby Jack cheese can be substituted with Monterey Jack or mozzarella for a different taste.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
