Ingredients
Scale
Chicken
- 1 chicken breast
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- 1 tbsp olive oil
Vegetables & Sides
- 1 cup cauliflower florets
- 1 avocado
- Salt, to taste
- Black pepper, to taste
- Olive oil, optional drizzle
- Fresh parsley for garnish
Instructions
- Steam Cauliflower: Steam the cauliflower florets in a steamer or pot with a steaming basket for 6-8 minutes until they are tender when pierced with a fork. Lightly season with salt immediately after steaming to enhance the flavor.
- Season and Pan-Sear Chicken: Pat the chicken breast dry and season both sides generously with salt, black pepper, and garlic powder. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through, ensuring the internal temperature reaches 165°F (74°C).
- Prepare Avocado Bowl: Dice the avocado into bite-sized pieces. Season with salt and black pepper to taste and drizzle with a little olive oil if desired to add richness and flavor. Mix gently to combine.
- Assemble and Serve: Arrange the steamed cauliflower florets and pan-seared chicken on a plate. Add the avocado bowl on the side. Garnish with freshly cracked black pepper and chopped fresh parsley for an aromatic finish. Serve immediately.
Notes
- Ensure the skillet is properly heated before adding the chicken to achieve a good sear.
- Do not overcook the chicken to keep it juicy and tender.
- Steaming cauliflower preserves nutrients and keeps it light.
- Avocado adds a creamy texture and healthy fats to the meal.
- Leftover chicken can be sliced and added to salads or wraps.
