Description

A simple and healthy meal featuring a perfectly pan-seared chicken breast paired with lightly steamed cauliflower and a fresh avocado bowl, seasoned to enhance natural flavors for a quick, balanced dish perfect for one.

Ingredients

Scale

Chicken

  • 1 chicken breast
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • 1 tbsp olive oil

Vegetables & Sides

  • 1 cup cauliflower florets
  • 1 avocado
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, optional drizzle
  • Fresh parsley for garnish

Instructions

  1. Steam Cauliflower: Steam the cauliflower florets in a steamer or pot with a steaming basket for 6-8 minutes until they are tender when pierced with a fork. Lightly season with salt immediately after steaming to enhance the flavor.
  2. Season and Pan-Sear Chicken: Pat the chicken breast dry and season both sides generously with salt, black pepper, and garlic powder. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through, ensuring the internal temperature reaches 165°F (74°C).
  3. Prepare Avocado Bowl: Dice the avocado into bite-sized pieces. Season with salt and black pepper to taste and drizzle with a little olive oil if desired to add richness and flavor. Mix gently to combine.
  4. Assemble and Serve: Arrange the steamed cauliflower florets and pan-seared chicken on a plate. Add the avocado bowl on the side. Garnish with freshly cracked black pepper and chopped fresh parsley for an aromatic finish. Serve immediately.

Notes

  • Ensure the skillet is properly heated before adding the chicken to achieve a good sear.
  • Do not overcook the chicken to keep it juicy and tender.
  • Steaming cauliflower preserves nutrients and keeps it light.
  • Avocado adds a creamy texture and healthy fats to the meal.
  • Leftover chicken can be sliced and added to salads or wraps.
