Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pound the chicken: Pound the chicken breasts to an even thickness for quicker, even cooking.
  3. Prepare coating: In one shallow bowl, whisk together the egg and milk. In another shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
  4. Coat the chicken: Dip each chicken breast into the egg mixture, then coat fully in the Parmesan breadcrumb mixture, pressing gently so the coating sticks.
  5. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2 to 3 minutes per side until golden brown.
  6. Bake: Transfer the chicken to the prepared baking sheet and bake for 12 to 15 minutes, or until the internal temperature reaches 165°F (74°C).
