Description

A delicious and easy Parmesan Roasted Potatoes recipe featuring baby red potatoes baked in a golden, crispy parmesan and breadcrumb crust. Perfect as a flavorful side dish with a crunchy texture and a buttery, cheesy taste.

Ingredients

Scale

Potatoes

  • 1.5 pounds baby red potatoes, halved lengthwise

Crisp Coating

  • 3 tablespoons salted butter, melted (â…œ stick)
  • ½ cup Italian-style Panko breadcrumbs
  • ½ cup pre-grated Parmesan cheese
  • ¼ cup freshly shredded Parmesan cheese

Garnish (Optional)

  • Minced fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. Butter the Baking Sheet: Pour the melted butter onto the baking sheet and gently tilt it to evenly coat the bottom surface with butter.
  3. Prepare the Breadcrumb-Parmesan Mixture: In a small bowl, whisk together the Italian-style Panko breadcrumbs, pre-grated Parmesan cheese, and freshly shredded Parmesan cheese until fully combined.
  4. Distribute the Mixture: Sprinkle the breadcrumb and cheese mixture evenly over the buttered baking sheet. If needed, gently shake the baking sheet to distribute the mixture evenly, but avoid spreading it with a utensil.
  5. Arrange the Potatoes: Place the halved baby red potatoes cut side down onto the breadcrumb mixture, pressing them gently into the crumbs so they adhere well.
  6. Bake: Bake in the preheated oven for 18 to 23 minutes, or until the potatoes are tender when pierced with a fork and the parmesan crust turns golden brown.
  7. Cool Slightly: Remove the baking sheet from the oven and let the potatoes cool for at least 5 minutes to allow the crust to set.
  8. Serve: Using a spatula or knife, gently cut between the potatoes to loosen them and transfer to a serving dish, keeping the parmesan crust intact. Garnish with minced fresh parsley if desired.
  9. Optional Serving Suggestions: Serve hot with dips or sour cream for added flavor.

Notes

  • Use baby red potatoes for tender, evenly cooked bites with a smooth skin.
  • Ensure the potatoes are cut evenly to cook uniformly.
  • Do not stir or move the potatoes while baking to keep the parmesan crust intact.
  • Freshly shredded Parmesan adds sharper flavor and better melting than pre-grated alone.
  • Optional garnishes such as parsley brighten the presentation and add freshness.
