Instructions

  2. Blend Dressing: In a blender or food processor, combine the peach, olive oil, vinegar, honey, mustard, and salt. Blend until the mixture is smooth and creamy.
  3. Adjust Consistency: Gradually add 1 to 2 tablespoons of water to the blend, as needed, to achieve your desired dressing consistency. Blend again briefly to combine.
  4. Season to Taste: Taste the dressing and adjust the flavor by adding more vinegar for tanginess or more honey for sweetness, blending briefly after each adjustment.
  5. Store or Serve: Use the dressing immediately for best flavor. Alternatively, store it in a sealed jar in the refrigerator for up to 5 days, shaking well before each use.
