Salad Dressing
- 1 ripe peach, peeled and pitted (or 1/2 cup frozen peach slices, thawed)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1–2 tablespoons water (to thin, if needed)
Instructions
- Prepare Ingredients: Peel and pit the ripe peach, or thaw frozen peach slices. Gather olive oil, apple cider vinegar, honey, Dijon mustard, and salt.
- Blend Dressing: In a blender or food processor, combine the peach, olive oil, vinegar, honey, mustard, and salt. Blend until the mixture is smooth and creamy.
- Adjust Consistency: Gradually add 1 to 2 tablespoons of water to the blend, as needed, to achieve your desired dressing consistency. Blend again briefly to combine.
- Season to Taste: Taste the dressing and adjust the flavor by adding more vinegar for tanginess or more honey for sweetness, blending briefly after each adjustment.
- Store or Serve: Use the dressing immediately for best flavor. Alternatively, store it in a sealed jar in the refrigerator for up to 5 days, shaking well before each use.
