Description

This Pineapple Jalapeño BBQ Chicken Pizza combines sweet and spicy flavors for a delicious homemade pizza experience. Featuring tender BBQ chicken, fresh pineapple chunks, and spicy jalapeño slices on a crispy golden crust, this pizza is perfect for a quick and flavorful meal that serves the whole family.

Ingredients

Scale

Protein

  • 3-4 boneless, skinless chicken breasts (about 1 lb)

Produce

  • 1 cup fresh pineapple chunks
  • 1 medium fresh jalapeño, sliced thinly
  • Fresh cilantro (optional)

Pantry

  • 1/2 cup BBQ sauce
  • 1 lb pizza dough
  • 2 cups shredded mozzarella cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat and Prepare Dough. Preheat your oven to 475°F (245°C). On a floured surface, roll out the pizza dough into a 12-inch round to prepare for topping.
  2. Cook the Chicken. Heat olive oil in a skillet over medium heat. Season the chicken breasts as desired, then cook for 6-8 minutes per side until golden brown and cooked through. Allow the chicken to cool slightly, then shred it using forks.
  3. Mix Chicken with BBQ Sauce. Toss the shredded chicken with BBQ sauce until fully coated to infuse the smoky, tangy flavor.
  4. Assemble the Pizza. Spread the remaining BBQ sauce evenly over the rolled-out dough. Sprinkle the shredded mozzarella cheese on top of the sauce to create a cheesy base.
  5. Add Toppings. Distribute pineapple chunks and thin jalapeño slices evenly over the cheese for a balance of sweetness and heat.
  6. Bake the Pizza. Bake in the preheated oven for 12-15 minutes, or until the crust turns golden brown and the cheese is bubbly and slightly browned.
  7. Garnish and Serve. Remove the pizza from the oven and let it cool slightly before slicing. Garnish with fresh cilantro if desired for a fresh herbal note.

Notes

  • For milder heat, remove the jalapeño seeds before slicing.
  • Use fresh or canned pineapple chunks, but drain canned pineapple well to avoid soggy crust.
  • You can substitute BBQ sauce with your favorite brand or homemade version.
  • Allowing the pizza to cool slightly before slicing helps the cheese set and prevents topping from sliding off.
