Ingredients
Scale
Potato Mixture
- 4 russet potatoes, cooked and mashed
- 2 green onions, chopped
- 1/4 cup sour cream
- Salt, to taste
- Pepper, to taste
- 8 oz cheddar cheese block, cut into strips
Coating
- 1/2 cup flour
- 1 egg, beaten
- 1/2 cup cornstarch
- 1 cup panko breadcrumbs
For Frying
- Vegetable oil (for frying)
Instructions
- Prepare the Potatoes: Mash the cooked potatoes in a large bowl until mostly smooth, leaving a few chunks for texture. Mix in the chopped green onions, sour cream, salt, and pepper until well combined.
- Form the Balls: Take a spoonful of the mashed potato mixture and flatten it in your palm. Place a strip of cheddar cheese in the center and wrap the potato mixture around the cheese to form a sealed ball. Repeat with the remaining mixture and cheese strips.
- Prepare the Coating: Set up three bowls: one with flour, one with the beaten egg, and one with a mixture of cornstarch and panko breadcrumbs. Coat each potato ball in flour, then dip into the beaten egg, and finally roll in the panko-cornstarch mixture until fully and evenly coated.
- Fry the Potato Cheese Sticks: Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Fry the coated potato balls in batches for about 3 minutes, or until they turn golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.
- Serve: Serve the potato cheese sticks hot and enjoy the crispy exterior with the gooey melted cheddar cheese inside.
Notes
- Ensure the cheese is fully enclosed within the potato mixture to avoid leakage during frying.
- Keep the oil temperature steady at 350°F (180°C) to achieve a crispy coating without absorbing excess oil.
- You can prepare the potato mixture ahead and refrigerate before forming the sticks.
- Serve with your favorite dipping sauce such as ketchup, ranch, or spicy mayo.
