Description

These Potato Cheese Sticks are crispy, golden-fried bites filled with gooey cheddar cheese and a flavorful mashed potato mixture. Perfect as an appetizer or snack, they combine creamy potatoes with a crunchy breadcrumb coating for an irresistible treat.

Ingredients

Scale

Potato Mixture

  • 4 russet potatoes, cooked and mashed
  • 2 green onions, chopped
  • 1/4 cup sour cream
  • Salt, to taste
  • Pepper, to taste
  • 8 oz cheddar cheese block, cut into strips

Coating

  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup cornstarch
  • 1 cup panko breadcrumbs

For Frying

  • Vegetable oil (for frying)

Instructions

  1. Prepare the Potatoes: Mash the cooked potatoes in a large bowl until mostly smooth, leaving a few chunks for texture. Mix in the chopped green onions, sour cream, salt, and pepper until well combined.
  2. Form the Balls: Take a spoonful of the mashed potato mixture and flatten it in your palm. Place a strip of cheddar cheese in the center and wrap the potato mixture around the cheese to form a sealed ball. Repeat with the remaining mixture and cheese strips.
  3. Prepare the Coating: Set up three bowls: one with flour, one with the beaten egg, and one with a mixture of cornstarch and panko breadcrumbs. Coat each potato ball in flour, then dip into the beaten egg, and finally roll in the panko-cornstarch mixture until fully and evenly coated.
  4. Fry the Potato Cheese Sticks: Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Fry the coated potato balls in batches for about 3 minutes, or until they turn golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.
  5. Serve: Serve the potato cheese sticks hot and enjoy the crispy exterior with the gooey melted cheddar cheese inside.

Notes

  • Ensure the cheese is fully enclosed within the potato mixture to avoid leakage during frying.
  • Keep the oil temperature steady at 350°F (180°C) to achieve a crispy coating without absorbing excess oil.
  • You can prepare the potato mixture ahead and refrigerate before forming the sticks.
  • Serve with your favorite dipping sauce such as ketchup, ranch, or spicy mayo.
