Description

This delicious recipe features tender baby potatoes roasted to golden perfection alongside a block of creamy feta cheese and aromatic garlic. Baked together with olive oil, oregano, and paprika, the feta softens and mingles with the crispy potatoes for a rich and savory dish that’s perfect as a side or a comforting snack.

Ingredients

Scale

Potatoes and Seasoning

  • 1 lb baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Cheese and Aromatics

  • 200g feta cheese block
  • 4 cloves garlic, peeled and smashed
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes and feta.
  2. Prepare Potatoes: Place the halved baby potatoes on a baking sheet and drizzle generously with olive oil. Sprinkle with dried oregano, paprika, salt, and pepper. Toss them well to ensure every piece is evenly coated with the seasoning.
  3. Arrange Feta and Garlic: Create a space in the center of the baking sheet for the feta block. Position the block of feta cheese there, and scatter the smashed garlic cloves around the potatoes on the sheet.
  4. Roast Ingredients: Roast everything in the preheated oven for 35 to 40 minutes, or until the potatoes become golden brown and crispy, and the feta cheese softens and develops a slight golden crust.
  5. Combine Feta and Potatoes: Remove the baking sheet from the oven carefully. Using a spoon, break up the softened feta cheese and gently toss it together with the roasted potatoes and garlic, allowing the creamy feta to melt into the potatoes.
  6. Serve: Garnish with fresh parsley for a pop of color and fresh flavor. Serve the dish warm as a comforting side or main accompaniment.

Notes

  • Halving the baby potatoes ensures even cooking and crispiness.
  • Smashing the garlic cloves allows them to roast and infuse the dish with a gentle garlic flavor without overpowering it.
  • If you prefer a spicier flavor, consider adding a pinch of chili flakes along with the paprika.
  • Fresh parsley adds a nice fresh contrast but can be omitted if unavailable.
  • For a gluten-free dish, ensure your paprika and oregano are certified gluten-free.
  • Store leftovers in an airtight container and reheat gently to avoid drying out the potatoes.
