Cream Cheese Filling:

  • 8 oz cream cheese (softened)
  • ¼ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Prepare dry ingredients: Whisk together the dry ingredients in a medium bowl.
  3. Mix pumpkin batter: In a large bowl, combine pumpkin, sugars, oil, milk, eggs, and vanilla. Gradually add dry ingredients.
  4. Prepare cream cheese filling: In a separate bowl, beat cream cheese, sugar, flour, egg, and vanilla until creamy.
  5. Layer and bake: Pour half of pumpkin batter into pan, top with cream cheese mixture, then remaining batter. Swirl with a knife and bake for 60-70 minutes.
  6. Cool and serve: Cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
