Ingredients
Scale
Sausage and Oil
- 4 chicken sausages (or any preferred sausage type), sliced into rounds
- 1 tablespoon olive oil
Vegetables
- 1 medium onion, sliced
- 2 bell peppers (red, yellow, or green), sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
Seasonings
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Garnish
- Fresh parsley or basil (optional, for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sausage and vegetables.
- Heat the Skillet: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat to start cooking the vegetables.
- Sauté Vegetables: Add sliced onions, bell peppers, and zucchini to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften and begin to release their flavors.
- Add Sausage: Push the vegetables to one side of the skillet and add the sliced chicken sausage to the other side. This allows the sausage to brown properly.
- Cook Sausage and Garlic: Cook the sausage for 5-7 minutes until it starts to brown. Then stir in minced garlic and cook for an additional 1-2 minutes until fragrant, enhancing the dish’s aroma.
- Season: Sprinkle dried oregano, dried thyme, salt, and pepper evenly over the sausage and vegetables. Stir to combine and ensure the seasoning coats everything.
- Roast in Oven: Place the skillet in the preheated oven and roast for 15-20 minutes. Midway through cooking, stir the mixture to promote even caramelization and tenderness.
- Finish and Serve: Remove the skillet from the oven once the sausage is fully cooked and the vegetables are tender and caramelized. Stir one last time to combine flavors evenly.
- Garnish: Optionally, sprinkle fresh parsley or basil over the skillet before serving to add a fresh, herbal note.
Notes
- Use an oven-safe skillet to seamlessly transition from stovetop to oven without transferring ingredients.
- Feel free to substitute chicken sausage with turkey sausage or your preferred sausage type.
- Add cherry tomatoes earlier if you prefer them softer or leave them to roast for a burst of juiciness.
- Adjust herbs and seasoning to your taste; fresh herbs can be added after cooking for more intense flavor.
- For a spicier option, consider adding red pepper flakes during seasoning.
