Description
A simple and flavorful roasted delicata squash recipe, perfect as a healthy side dish. The squash is seasoned with olive oil, salt, pepper, paprika, and fresh thyme, then roasted until tender and golden brown, bringing out its natural sweetness and crisp texture.
Ingredients
Scale
Squash
- 2 Delicata Squash
Seasoning
- 2 tablespoons Olive Oil
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Ground Black Pepper
- 1/4 teaspoon Paprika
- 3 sprigs fresh thyme (finely diced)
Instructions
- Preheat the oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the squash evenly at a high temperature.
- Prepare the squash: Cut the delicata squash in half lengthwise, then use a spoon to scoop out all the seeds. Slice the squash into 1/2 inch thick half-moon pieces, keeping the skin on for added texture and flavor.
- Toss with seasoning: Place the sliced squash in a large mixing bowl. Add olive oil, kosher salt, black pepper, paprika, and finely diced fresh thyme. Toss everything together until the squash pieces are evenly coated with the seasoning.
- Arrange on baking sheet: Lay the seasoned squash slices flat in a single layer on a parchment-lined baking sheet. Avoid overlapping the pieces to ensure they roast properly; use two pans if necessary for enough space.
- Roast the squash: Roast in the preheated oven for 45 minutes, or until the squash is tender and golden brown on the edges, indicating it is perfectly cooked.
- Serve: Remove the squash from the oven and transfer to a serving dish. Serve immediately while warm to enjoy the best texture and flavors.
Notes
- Delicata squash skin is edible and becomes tender when roasted, so no need to peel.
- Adjust seasoning according to taste; add a pinch of cayenne for heat if desired.
- For even roasting, spread the squash pieces out without overlapping.
- Use fresh thyme for best flavor, but dried thyme can be substituted (use about 1 tsp dried).
- Leftover roasted delicata squash can be refrigerated and reheated gently.
