Instructions

  1. Mix the base: In a large mixing bowl, combine the crushed Samoa cookies (or vanilla wafers), softened cream cheese, caramel sauce, and coconut extract. Mix thoroughly until a sticky dough forms.
  2. Form truffles: Roll the dough into small balls approximately 1 inch in diameter and place them on a parchment-lined baking sheet to prepare for chilling.
  3. Chill the truffles: Refrigerate the truffle balls for 30 minutes to allow them to firm up, making them easier to coat in chocolate.
  4. Melt the chocolate: While chilling, melt the dark or milk chocolate using a double boiler or microwave in short intervals to avoid burning, stirring frequently until smooth.
  5. Coat truffles in chocolate: Once the truffles are firm, dip each ball into the melted chocolate, ensuring complete coverage. Return coated truffles to the parchment-lined sheet.
