  • 1 1/2 cups self-rising flour
  • 1/2 tsp salt

  • 1/2 tsp granulated onion

  • 1 1/2 cups grated Cheddar cheese
  • 1 small grated carrot
  • 1 small grated zucchini
  • 1/4 cup sliced fresh chives
  • 1 cup buttermilk
  • 1 large whisked egg

Sausage

  • 2 hot or mild Italian sausage casings (removed)

  • Tomato chutney or tomato bacon jam


Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Grease a standard muffin tin or line it with paper muffin liners to prevent sticking.
  2. Combine dry ingredients: In a large mixing bowl, whisk together self-rising flour, salt, black pepper, granulated garlic, granulated onion, and paprika until fully combined to ensure even seasoning.
  3. Add wet ingredients and vegetables: To the dry mixture, add grated Cheddar cheese, grated carrot, grated zucchini, sliced fresh chives, buttermilk, and the whisked egg. Stir gently just until all ingredients are combined; avoid overmixing to keep the muffins tender.
  4. Divide batter: Evenly spoon the batter into the prepared muffin tin, filling each cup sufficiently but leaving room for the sausage topping.
  5. Add sausage: Take the Italian sausage meat and divide it into six even portions. Roll each portion into a smooth ball and place one on top of the batter in each muffin cup.
  6. Bake until golden: Place the muffin tin into the preheated oven and bake for approximately 20 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of the muffin portion without sausage comes out clean.
