Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 6 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
Vegetables & Garnish
- 2 medium zucchinis, sliced into half-moons
- 1 cup fresh corn kernels (from about 2 ears of corn)
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
Instructions
- Season Chicken: Season both sides of the chicken breasts with salt and freshly ground black pepper to taste, ensuring the chicken is evenly seasoned before cooking.
- Sear Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- Prepare Garlic Butter: Reduce skillet heat to medium-low and add 4 tablespoons of butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn the garlic.
- Cook Zucchini: Stir in Italian seasoning, then add the sliced zucchini to the skillet. Cook for about 4 minutes, stirring occasionally, until zucchini begins to soften.
- Add Corn: Add fresh corn kernels to the skillet and cook for an additional 2 minutes until tender.
- Combine Chicken and Veggies: Return the chicken breasts to the skillet. Gently spoon garlic butter along with zucchini and corn over the chicken to combine flavors.
- Finish with Butter & Lemon: Add the remaining 2 tablespoons of butter, chopped parsley, and squeeze the juice of one lemon over everything. Stir gently to combine and heat through for 1-2 minutes.
- Adjust Seasoning: Taste the dish and add more salt and pepper if necessary to suit your flavor preference.
- Serve: Serve the savory garlic butter chicken hot, garnished with additional parsley if desired for a fresh finishing touch.
Notes
- Ensure chicken breasts are cooked through by checking that internal temperature reaches 165°F (74°C).
- You can substitute fresh corn with frozen corn if fresh is unavailable; just thaw before cooking.
- For a richer flavor, consider using a mix of unsalted and salted butter according to taste.
- This recipe is versatile and pairs well with steamed rice, mashed potatoes, or crusty bread to soak up the garlic butter sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
