Scrambled Eggs:

  • 2 large eggs
  • 2 tablespoons milk

Instructions

  1. Prepare the Scrambled Eggs: Crack eggs into a bowl, add milk, salt, and pepper. Whisk until fully combined. Heat a non-stick skillet over medium heat and add half the butter. Scramble eggs until just set but still soft. Remove from heat.
  2. Assemble the Sandwich: Butter one side of each bread slice with the remaining butter. Place one slice, butter-side down, onto a skillet over medium heat. Layer with half the cheese, scrambled eggs, optional toppings, then the remaining cheese. Top with the second slice of bread, butter-side up.
  3. Grill the Sandwich: Grill for 2–3 minutes per side, pressing gently, until golden brown and cheese is melted. Slice and serve warm.

Notes

  • You can swap cheddar for mozzarella, pepper jack, or Swiss.
  • Add extras like sautéed spinach, diced tomatoes, or avocado slices for variation.
