For the Soup:
- 1 tablespoon olive oil
- 1 pound ground beef (or lamb)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups beef broth
- 2 cups diced potatoes
- 1/2 cup heavy cream (optional)
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large pot. Add ground beef, cook until browned.
- Add onion and garlic, cook until softened.
- Stir in carrots and celery, cook for 5 minutes.
- Add tomato paste, Worcestershire sauce, thyme, and rosemary. Stir to coat.
- Pour in beef broth, bring to a boil.
- Add potatoes, simmer for 15-20 minutes.
- Stir in peas and corn, cook for 5 minutes.
- If using, stir in heavy cream.
- Season with salt and pepper.
- Serve hot.
Notes
- For a vegetarian version, use plant-based ground meat and vegetable broth.
- To make it dairy-free, omit the cream or use a plant-based alternative.
