Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef (or lamb)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups beef broth
  • 2 cups diced potatoes
  • 1/2 cup heavy cream (optional)
  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil in a large pot. Add ground beef, cook until browned.
  2. Add onion and garlic, cook until softened.
  3. Stir in carrots and celery, cook for 5 minutes.
  4. Add tomato paste, Worcestershire sauce, thyme, and rosemary. Stir to coat.
  5. Pour in beef broth, bring to a boil.
  6. Add potatoes, simmer for 15-20 minutes.
  7. Stir in peas and corn, cook for 5 minutes.
  8. If using, stir in heavy cream.
  9. Season with salt and pepper.
  10. Serve hot.

Notes

  • For a vegetarian version, use plant-based ground meat and vegetable broth.
  • To make it dairy-free, omit the cream or use a plant-based alternative.
