Ingredients
Chicken:
- 1.5 pounds boneless, skinless chicken thighs, trimmed
Veggies:
- 1 can (15 ounces) chickpeas, drained and rinsed; 1 red bell pepper, sliced; 1 yellow bell pepper, sliced; 1 small red onion, thinly sliced
Seasonings:
- 1 can (14.5 ounces) diced tomatoes with juices; 1/2 cup kalamata olives, pitted and halved; 3 cloves garlic, minced; 1 teaspoon dried oregano; 1/2 teaspoon ground cumin; 1/4 teaspoon crushed red pepper flakes (optional); 1/2 teaspoon salt; 1/4 teaspoon black pepper; 1 tablespoon olive oil; 1 tablespoon lemon juice; 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Layer Ingredients: Place bell peppers and onions in the slow cooker. Add chicken on top.
- Mix Seasonings: Combine garlic, oregano, cumin, red pepper flakes, salt, pepper, olive oil, and lemon juice. Pour over chicken.
- Add Remaining Ingredients: Add tomatoes with juices and chickpeas. Stir gently. Cook on low for 6-7 hours or high for 3-4 hours.
- Finish: Add olives in the last 30 minutes. Shred chicken if desired. Garnish with parsley before serving.

- You can use chicken breasts instead of thighs.
