- 6 cups chicken broth or water
- 1 teaspoon salt (more to taste)
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes (optional)
- 2 bay leaves
- ½ teaspoon thyme (dried or fresh)
- 1 teaspoon apple cider vinegar
Instructions
- Soak the black-eyed peas: Overnight in water or use quick-soak method.
- Sauté onion and garlic: In olive oil until soft.
- Add remaining ingredients: Including ham hock, peas, broth, spices.
- Simmer: Uncovered for 1.5 to 2 hours.
- Finish and serve: Remove bay leaves and ham hock, shred meat, add vinegar, adjust seasoning, and serve.
Notes
- For a vegetarian version, omit meat and use vegetable broth.
