  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups fresh spinach, chopped

Cheese Mixture:

  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Egg Mixture:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano

Additional:

  • Nonstick spray or butter for greasing

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Sauté vegetables: In a skillet, sauté the onion in olive oil until soft. Add garlic, then spinach until wilted. Let cool.
  3. Mix ingredients: Whisk together eggs, milk, seasonings. Add cheeses and spinach mixture.
  4. Bake: Pour mixture into baking dish and bake for 30-35 minutes until set and golden.
