Instructions
- Prepare baking surface: Line a baking sheet with parchment paper or a silicone mat and set aside to ensure the cookies have a nonstick surface while cooling and hardening.
- Melt chocolate and caramel: In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, caramel chips, and salted butter. Microwave at 50% power for 1 minute, then stir. Continue microwaving in 30-second increments at 50% power, stirring between each, until the mixture is mostly smooth and fully melted.
- Add marshmallows: Place the mini marshmallows into the melted chocolate mixture and microwave for an additional 1 minute to soften and incorporate them.
- Mix and combine: Stir the mixture until smooth, then fold in the Rice Krispie cereal until all pieces are uniformly coated. Let the mixture cool for a few minutes to make handling easier.
- Form cookies: Spray your hand with nonstick cooking spray. Using a 1/4 cup measuring scoop, scoop the mixture into your hand, roll it into a ball, and then flatten into discs. Place these discs on the prepared parchment-lined baking sheet to harden and set.
