Description

Brownie Layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Additional:

  • 1/3 cup strawberry jam or puree
  • 1/2 cup chopped fresh strawberries

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the Brownie Layer: In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla, then mix in cocoa powder, flour, salt, and baking powder. Pour 3/4 of the batter into the pan.
  3. Make the Cheesecake Layer: In a separate bowl, beat cream cheese and sugar until smooth. Add egg and vanilla, then spread over the brownie layer.
  4. Assemble: Spoon dollops of remaining brownie batter over the cheesecake layer. Swirl with a knife. Add strawberry jam/puree, swirl, and top with chopped strawberries.
  5. Bake: Bake for 35–40 minutes until set. Cool before slicing.

Notes

  • You can use raspberry or blueberry jam for different flavors.
  • For neat slices, refrigerate the brownies for at least 1 hour before cutting.
