Description

A refreshing and vibrant Strawberry Watermelon Salad tossed with a sweet and tangy honey-lime vinaigrette, enhanced with fresh herbs like mint, basil, and parsley. Perfect for a light summer snack or a healthy side dish.

Ingredients

Scale

Fruit

  • 1 pound strawberries (hulled & sliced)
  • 1/2 seedless watermelon (cubed)

Herbs

  • 6 mint leaves (thinly sliced)
  • 3 basil leaves (thinly sliced)
  • 2 tablespoons fresh parsley (finely chopped)

Vinaigrette

  • 1/3 cup honey
  • 1 teaspoon lime zest
  • 1/4 cup fresh squeezed lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the watermelon: Cut the watermelon into bite-sized pieces and place them in a large mixing bowl to form the base of the salad.
  2. Add strawberries: Hull and slice the strawberries, then add them to the watermelon in the mixing bowl to combine the two fruits.
  3. Add fresh herbs: Thinly slice the mint and basil leaves and sprinkle them over the fruit mixture for a fresh, aromatic touch.
  4. Make the vinaigrette: In a small bowl, mix together the honey, lime zest, lime juice, and sea salt to create the base of the dressing.
  5. Incorporate olive oil: Gradually whisk in the olive oil with the honey-lime mixture until the vinaigrette becomes smooth and emulsified.
  6. Toss salad with vinaigrette: Drizzle half of the vinaigrette over the fruit and herb mixture, then gently toss to ensure even coating without bruising the fruit.
  7. Serve or chill: Serve the salad immediately or chill it in the refrigerator for 30 minutes to allow the flavors to meld and intensify before serving.

Notes

  • Chilling the salad for 30 minutes enhances the flavor absorption of the vinaigrette.
  • Use fresh, ripe strawberries and seedless watermelon for the best taste and texture.
  • This salad is best served fresh due to the high water content of the fruits.
  • Adjust honey quantity in the vinaigrette to your preferred sweetness level.
  • The salad can be garnished with extra mint or basil leaves for presentation.
