Burger Patties

  • 1 (10-ounce) package Birds Eye® Steamfresh® Sweet Peas
  • 2 medium russet potatoes, peeled and cubed
  • 1/2 sweet onion, chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh dill, minced
  • 1 tablespoon fresh parsley, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for spraying)

Yogurt Sauce

  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/3 cup crumbled feta cheese
  • Salt and black pepper to taste

To Serve

  • Toasted buns
  • Fresh tomato slices
  • Fresh onion slices
  • Arugula leaves


Instructions

  1. Blanch and Mash Sweet Peas: Boil water and blanch the sweet peas for 2-3 minutes. Drain the peas well and mash them in a bowl using a fork until mostly smooth.
  2. Boil Potatoes: In salted boiling water, cook the peeled and cubed russet potatoes until tender, about 10-15 minutes. Drain and allow to cool for 10 minutes.
  3. Combine Burger Ingredients: Add the cooled potatoes to the mashed peas, then stir in the chopped onion, crumbled feta cheese, minced fresh dill and parsley, beaten egg, salt, black pepper, and paprika. Mix thoroughly until the mixture holds together well.
  4. Form Patties and Chill: Shape the mixture into 4-inch diameter patties and place them on a tray. Refrigerate for 30 minutes to firm up the patties for easier cooking.
  5. Prepare Yogurt Sauce: In a separate bowl, mix Greek yogurt with fresh dill, lemon zest, lemon juice, crumbled feta cheese, and season with salt and black pepper. Chill the sauce until ready to serve.
  6. Air Fry Patties: Lightly spray each patty with olive oil. Preheat an air fryer to 375°F (190°C), then Air Fry the patties for about 15 minutes, flipping halfway through, until golden brown and cooked through.
  7. Assemble Burgers: Place each cooked patty on a toasted bun. Top with the creamy yogurt sauce, fresh tomato slices, onion slices, and arugula leaves. Serve immediately.

  • To ensure patties hold together well, don’t skip the refrigeration step before cooking.
  • This recipe is vegetarian and can be made gluten-free by selecting gluten-free buns.
  • Use fresh herbs for the best flavor, but dried can be substituted if needed (use half the amount).
