Sweet Potatoes
- 2 pounds sweet potatoes, peeled and cut into chunks
Flavorings
- 2 tablespoons unsalted butter
- 1 to 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce from the chipotle can
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Garnish
- Chopped fresh cilantro (optional)
Instructions
- Boil Sweet Potatoes: Place the sweet potato chunks in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook until the sweet potatoes are tender, about 15 to 20 minutes.
- Drain and Return to Pot: Drain the sweet potatoes well and return them to the pot to prepare for mashing.
- Add Seasonings and Mash: Add the butter, minced chipotle peppers, adobo sauce, lime juice, lime zest, ground cumin, kosher salt, and freshly ground black pepper to the pot. Mash the mixture until smooth and creamy, tasting and adjusting seasoning if necessary.
- Serve and Garnish: Transfer the mash to a serving bowl and garnish with chopped fresh cilantro, if desired. Serve the mash hot alongside your favorite dishes.
