Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- ½ onion, diced
- 1 pound ground turkey
- 3 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- 15 ounces black beans, rinsed and drained (1 can)
- 15 ounces golden sweet corn, drained (1 can)
- 14.5 ounces petite diced tomatoes (1 can)
- 1 head butter lettuce, leaves washed and prepared for wraps
Optional Toppings
- Shredded Colby jack cheese
- Cilantro
- Sour cream
Instructions
- Heat the Oil and Cook Onion: Warm the olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes, stirring occasionally to prevent burning.
- Brown the Ground Turkey: Add the ground turkey to the skillet with the onions. Cook, breaking it up with a spatula, until the meat is fully browned and no longer pink, about 8 minutes.
- Add Spices and Garlic: Stir in the minced garlic, cumin powder, chili powder, onion powder, garlic powder, and kosher salt. Cook for an additional 30 seconds until fragrant, mixing well to evenly coat the turkey.
- Combine Beans, Corn, and Tomatoes: Add the rinsed black beans, drained golden sweet corn, and diced tomatoes to the skillet. Stir everything together and cook for 5 minutes to let the flavors meld and the mixture heat through.
- Assemble the Lettuce Wraps: Spoon the turkey mixture into individual butter lettuce leaves. Top with shredded Colby jack cheese, fresh cilantro, and a dollop of sour cream if desired. Serve immediately.
Notes
- For a spicier wrap, add a pinch of cayenne pepper or a few dashes of hot sauce when adding the spices.
- These wraps are perfect for meal prepping; store the turkey mixture and lettuce leaves separately in airtight containers and assemble just before eating.
- You can substitute ground turkey with ground chicken or beef as preferred.
- Use romaine or iceberg lettuce if butter lettuce is unavailable, though butter lettuce provides the best wrap texture.
- To make this recipe gluten-free and low carb, be sure to check canned beans and corn ingredients for any additives.
