Ingredients
Scale
Jalapenos
- 6 fresh jalapeno peppers, stems removed
Wet Ingredients
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1 tablespoon lime juice
- 1 clove garlic, minced
Seasonings
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar (optional, to taste)
Garnish
- Fresh cilantro, for garnish (optional)
Instructions
- Roast the Jalapenos: Begin by roasting the jalapeno peppers to enhance their flavor. You can do this on a grill, under a broiler, or directly over a gas flame. Roast them until their skins are blistered and charred, about 10–15 minutes, turning occasionally for even roasting.
- Steam the Roasted Peppers: Place the roasted jalapenos in a bowl and cover them with plastic wrap or a lid. Let them sit for about 10 minutes to steam, which helps loosen the skins for easy removal.
- Peel and Seed: After steaming, peel off the charred skins from the jalapenos. Rinse under cold water if needed. Cut the jalapenos in half and remove the seeds for milder heat or leave some seeds for extra spiciness.
- Combine Ingredients: In a blender or food processor, add the roasted jalapenos, sour cream, mayonnaise, buttermilk, lime juice, minced garlic, salt, black pepper, and optional sugar.
- Blend Until Smooth: Blend the mixture until smooth. Adjust the texture by adding more buttermilk for a thinner salsa or keep it thicker as preferred.
- Adjust Seasoning: Taste the salsa and add extra salt, lime juice, or sugar as needed to balance the flavors.
- Garnish: Transfer the salsa to a serving bowl and garnish with freshly chopped cilantro, if desired.
- Chill: Refrigerate the salsa for at least 30 minutes before serving to allow the flavors to meld together.
Notes
- For a milder salsa, remove all seeds from the jalapenos; for more heat, leave some or all seeds.
- Roasting the peppers enhances their smoky flavor and balances their heat.
- Adjust the consistency by varying the amount of buttermilk added.
- Can be served as a dip, a sauce for tacos, grilled meats, or as a creamy salad dressing.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
